Our team brings over 30 years of experience in assisted living and memory care, specializing in Alzheimer’s and dementia support. Each member is dedicated to creating a safe, engaging, and compassionate environment where residents feel valued and families find peace of mind. Justin Trodahl
Owner, President, and Leader of the Assisted Living Management Team
Justin Trodahl, owner of Tiffin House, has guided the community to become one of Georgetown’s highest-rated assisted living and memory care facilities. With decades of experience—including serving as Director of Rehabilitation in Texas nursing homes—Justin saw firsthand that Alzheimer’s and dementia residents were often underserved. Drawing on his background and family experience, he developed the Quality of Life Program, a cornerstone of Tiffin House’s unmatched care.
Justin believes in adding value to every resident’s life, encouraging participation in daily activities like folding laundry or sweeping. He provides specialized Alzheimer’s and dementia training for staff and offers free monthly classes for families.
A proud combat veteran, Justin served in the U.S. Army from 1992 to 2016, flying AH-64 Apache helicopters during the Iraqi War. He holds an Occupational Therapy degree from the U.S. Army Health Science Center, a Psychology degree from Texas A&M, and a Master’s in Business from the University of Oklahoma.

Hortencia Torres
Quality Assurance Manager, Tiffin House Campus
Hortencia is a native Texan, born in Eagle Pass, Texas. She graduated from high school in 1984 and moved to Georgetown in 1985. Hortencia has two wonderful children, Anabelle and Ernesto, and three grandchildren.
Mrs. Torres has been a CNA since 1987 and was a supervisor for the Georgetown ISD for 12 years before retiring to take care of her mother.
In February 2011, Hortencia came to Tiffin House to visit a resident that had moved to Tiffin House from another facility where she was working and she fell in love and never left. She is the Lead Assistant Manager and she is the campus leader of all Nursing Assistants. Hortencia ensures our staff maintains the highest level of professionalism and quality of care.


Nereida Del Real
RN – Director of Nursing
Nereida was born in Durango, Mexico. She moved to Texas with her family when she was 9. At the age of 15, she started her first job at McDonald's, where, to no surprise to Tiffin, she was promoted to manager after only a few months. In 2015, she was introduced to Tiffin House by a friend, and she decided to make a change and join the Tiffin family.
She started as a Resident Care Aide and immediately felt the love in the Tiffin homes, and she especially loved the sweet residents. Nereida decided this was the career path for her, and she rapidly secured a position as Team Leader due to her character and work ethic.
After a few years as a Team Leader, she decided she wanted to further her knowledge in the field and began LVN nursing school. Nereida attended ACC’s nursing program while still working and graduated in August 2021. She then stepped into the Director of Nursing role while finishing her RN. She is now a proud Registered Nurse and the Director of Nursing for Tiffin House. An impressive young lady.
Shawn Eppel
BSN, RN – Nurse
A southern girl at heart, Shawn was born and raised in Baton Rouge, Louisiana, where she worked as a paramedic for 8 years before graduating Cum Laude with her Bachelors of Nursing degree from Oregon Health and Science University.
She has 10 years of nursing experience in areas including Infusion Therapy and Progressive Care nursing. Shawn joined the Tiffin team in May of 2019 and already feels at home working with the loving staff and fabulous residents!
Shawn lives in Georgetown with her husband, Konrad, and their two feisty boys; Luke, 11, and Cody, 9. She enjoys spending her time at home on the “mini farm” caring for their goats, chickens, and turkeys. Shawn also enjoys baking, crafting, party planning, binge watching Netflix, and watching Aggie football on Saturdays. Her son Luke is also a diehard Aggie fan!


Tasha Pool
Assistant Manager, Tiffin House Campus
Tasha was born in Bryan-College Station, Texas. After graduating high school in 1991, she began working for Sanderson Farms as Assistant to the Manager. She stayed with Sanderson Farms for 11 years before taking positions as a Loss Prevention Manager at Sears for three years, and as a Private Caregiver for five years.
In 2011 Tasha began working for Tiffin House as a Resident Aide. She was an exceptional worker and leader, so in 2015 she was promoted to Assistant Manager. Her love for the residents and leadership of the Tiffin House staff are the embodiment of the Tiffin House mission.
Tasha is a mother of three children and a grandmother of six grandchildren. She is a Youth Advisory board member of the Youth Department at the Endtime Evangelistic Pentecostal Church.
She loves her role in caring for those in need at Tiffin House and feels each resident is family. She believes in the Tiffin House philosophy and inspires all those that she leads.
Nancy Meyer
Activity Director
Nancy was born in Georgetown, and raised in Cedar Park Texas. She is a proud 5th generation Texan! When Nancy’s parents began having health issues, she became a full-time caregiver to both her mother and father. She understands the toll it can take on a family and how difficult decisions about your loved one’s healthcare can be on a family. She wishes Tiffin House would have been open when she needed help with her own parents’ care.
Nancy joined the Tiffin House Team in 2010 as the Activities Director. She believed in the Tiffin House philosophy and desired to help others going through the same journey. She has flourished in this role, providing exceptional care to the Tiffin House residents.
Nancy’s passion for the residents is inspiring and ensures each of them receives nothing but the best care.
You can always find her spending time with each of her Tiffin House residents offering an activity they would enjoy. You might also see her out with Tiffin House residents, taking in the beautiful sights and eats that Georgetown has to offer.


Petrice Goldsby
RN – Nurse
Petrice Goldsby is a native-born Texan, raised in the small town of Clay, Texas. Petrice graduated from Snook High School in 1998 and became a CNA shortly thereafter. Petrice moved to the Austin area in 2009 to continue her education and became a Registered Medical Assistant.
In May of 2010, Petrice began working for Tiffin House as a Resident Care Aide. Petrice quickly demonstrated a stellar work ethic and drive to improve everyday. Her character and leadership skills, coupled with her love for the residents, led to her being promoted to Assistant Manager and then Resident Director.
Petrice then decided to continue her education, and in 2016 she completed nursing school, becoming a Licensed Vocational Nurse. Following graduation, Petrice wished to broaden her knowledge and skills working in several different settings to include skilled nursing facilities and a pediatric hospital. In September 2021, she returned to Tiffin House, now as a member of the amazing Tiffin Nursing Team. We are very proud and honored to have her back home!
Petrice also has three sons, named Markedreon, Martreveon, and Mardarreon.
Lindsey Lockwood
RN – Nurse
Lindsey Lockwood was born and raised in Monroe, Louisiana. She graduated from Louisiana Tech University in 2004. She has been an RN for over 20 years and is a Certified Oncology Nurse with training in Oncology, Hospice, and Geriatrics. Before Tiffin House, she was the Director of Nursing at an oncology center for 12 years.
Lindsey lives in Georgetown with her husband, Trey, and their two children; Sarah-Jane and Read. They have 2 dogs, 20+ chickens, and a bearded dragon. Lindsey enjoys crawfish boils, LSU baseball, New Orleans Saints football, and her church. Both her and her husband are SCUBA certified and enjoy diving in the Caribbean.
Lindsey is also the manager of a local select baseball team, GTX Bombers Baseball. She hopes her kids will one day go to Texas A&M!


Kayleigh Jones
RN – Nurse
Kayleigh was born in Temple, Texas and raised in the Harker Heights/Killeen area. Her grandfather retired from the military here and settled. She went to Harker Heights High School, graduating in 2014, and later attending Temple College, receiving an Associate of Science in Pre-Nursing in 2021. She was then accepted into the ADN program at Central Texas College and graduated with her RN in 2023. Now a student at Texas A&M – Central Texas, she will graduate with her BSN in December of 2025.
Prior to RN school, Kayleigh was a CNA (2016) and then a Medication Aide (2017), working in memory care units and skilled nursing facilities across Central Texas. She also worked as a Registered Behavior Technician in the field of Applied Behavior Analysis working with children diagnosed with Autism spectrum disorder with behavioral issues for 5 years, while in nursing school. She began her nursing career as a Private Duty Pediatric RN for medically fragile children in the home setting, and then accepted a position as a Nursing Supervisor for another pediatric private duty nursing company. At this position, she oversaw a caseload of 18 children and their nurses.
After staying there for a year, she realized she missed working in memory care from her CNA days, deciding she wanted to try something new. Then Tiffin House came along, and she is now so excited to be on this team. In Kayleigh's free time, she enjoys cooking, gardening, and shopping. She lives with her fiancé, Chris, and her 8 year old son, Miguel, in Killeen, Texas.
Ariana Castelan
Office Team
Ariana has been in the caregiving profession for over 20 years. She discovered her love for the elderly as a teenager in high school, when she would volunteer at nursing homes and assisted living facilities in the Georgetown area. Ariana graduated from Georgetown High School in 2001 and completed medical assisting school in 2009. She has experience as a medical assistant, medication aide and private home health aide.
Ariana has worked for Tiffin House since 2012 and has been awarded several times for her exceptional skills, including recognition for Employee of the Year. Ariana started as a caregiver, was promoted to Team Leader, and is now an Office Assistant. Ariana is also in school to become a nurse!
Ariana enjoys reading, scary movies, her puppy Dani, and spending time with Justin.


Sylvia Molina
Madame Chef
Sylvia was born in Memphis, Texas. She moved to Cameron, Texas in 1968, and attended school in the Yomen School District. Her Yomen spirit is strong!
Sylvia was a manager for 35 years at the Royal City Company that produces office chairs. In 1994, she opened up her own business, Molina’s Restaurant, and in 2014, Sylvia started working at Tiffin House. Her excellent cooking skills earned her the name, “Madame Chef” from one of our dear residents.
Sylvia has one daughter, three grandchildren, and three great-grandkids. She loves to travel and attend her great-grandkids’ activities.
Tiffany Enos
Office Team
Tiffany is a native Texan, born and raised in Georgetown, Texas. She is married to her high school sweetheart, Shawn, and together they have a wonderful daughter, Sydney. Who is currently living overseas but has previously worked with Tiffin House.
Ms. Enos has been in the Senior Living Industry for over 27 years. Her knowledge and passion for caring for our seniors are commendable. She has experience with Independent Living, Assisted Living, and Memory Care. It is an honor to help residents and their families find a place to call home that will take care of the residents with dignity, respect, and a loving heart, which is why she has chosen Tiffin House. Tiffany has a special place in her heart for Dementia residents as she has personally experienced this with her daddy.
Tiffany has served on several Boards and Commissions, including the Commission on Aging for the City of Georgetown, as well as the Georgetown Area Parkinson's Board and the Georgetown Chamber of Commerce, just to name a few.

Deanna Mendez
Office Team
Born and raised in Texas, Deanna was introduced to the world of healthcare early on by her mother, who worked in radiology. Spending time in hospitals and radiology clinics sparked her fascination with the medical field and gave her a clear sense of purpose: helping others.
With 5 years of dedicated experience as a medical assistant, she has developed a strong foundation in providing high-quality care across diverse patient populations, from pediatrics to geriatrics. Her career has afforded her the opportunity to work within several specialized areas, including cardiology, rheumatology, oncology, ICU, ED, endocrinology, neurology, dermatology, surgical units and also assisting in surgeries, enhancing her expertise in a wide range of medical needs. Additionally, her background in family care clinics has enabled her to collaborate effectively with both doctors and nurses, ensuring seamless patient care and fostering a supportive healthcare environment. Deanna’s goal is to continually advance her knowledge and contribute to residents care with integrity and professionalism here at Tiffin House.
She enjoys hiking, reading, watching funny movies, and spending quality time with family and friends, especially with her 4 year old son, Jordan, who is her best friend.

Our six Lahsa Apso pets are a constant source of entertainment and affection at the Tiffin House. They love our residents and bring an added sense of home and joy to our facility. They are certainly part of our family and loved by all.
